Life by Chocolate Pie

This is a super easy and quite yummy chocolate pie! A favorite for the summer when avocados are in season and huge! This recipe would be delicious topped with sliced bananas, or perhaps layer the bananas on top of the crust before pouring the chocolate mousse in!
Crust Ingredients:
  • 2 c. raw pecans, soaked for 2-4 hours.
  • 8 large organic dates
  • 1 tbs. organic vanilla extract
  • 1 pinch of sea salt

1. Grind all ingredients in a food processor until it starts to stick together.dsc03919 dsc03922-1
2. Press into a 9 inch pie plate.  Set aside.

Mousse Ingredients:

  • 4 small, organic avocados
  • 1 large, organic banana
  • 3/4 c. raw honey or grade B maple syrup
  • 3 tbs. cold pressed, organic coconut oil
  • 1 ½ c. raw, organic cacao powder
  • Sliced organic fruit/coconut for decoration

3. Blend all ingredients together in a food processor or a high powered blender such as a Vita-Mix, until you reach a smooth mousse-like texture.

4. Pour into crust and decorate with sliced fruit.
5. Set in the refrigerator until ready to serve.
