Easy Tartelettes

May 1, 2009

sany8159This is a fun and easy way to make little individualized desserts for everyone! They are cute and can be filled with just about anything you want. Make it a chocolate mousse for a decadent dessert or perhaps just some fruit with a drizzle of honey for a more summery treat!

Crust Ingredients:

  • 2 c. pecans, or other nuts (choose a nut that goes well with your filling)
  • 8 large organic dates
  • 1 pinch sea salt
  • dash of vanilla

1. Pulse all ingredients in a food processor until sticky.
2. Line the cups of a muffin tin with cling wrap.
3. Smoosh the “dough” into and up the sides of the muffin cups to create a little cup.
4. Refrigerate. Once they are ready, pull the individual little crusts out by the cling wrap and remove wrap.
5. Set it on a plate and fill with goodies! Ideas below:

1. Chocolate Mousse from this post.
2. Chopped fruit with a drizzle of honey.
3. Whipped cream topped with fruit and honey.
4. Fill with ice-cream and freeze for a frozen treat.
5. Custard.
6. Apple pie filling. (if you do this, add a bit of nutmeg and cinnamon to the crust too!)
7. Yogurt.
8. Whatever you want!

The Fruit Tartlettes were a hit! The flavorful nutty shells complimented the fruits perfectly! Definately a favorite.
